Vegan Fred Hunny
Learning how to make Vegan Hunny was a tricky process as there are many things to consider and perfect.
Temperature – Taking care not to burn or caramelise
Sugar Content – Fruits all have varying amounts of sugar
Water Content – This is where the balance of density is decided
Impurities – Making sure the process is pure and remains pure
Ingredients
Pure is BETTER
100% Pure Fruit Juice Bases
All our Hunny range has a base of pure fruit juice. Apple is the most important as it has a high pectin content. Pineapple Hunny has a higher sugar content so that one’s a more delicate cook.
Raw Agave Syrup
We use pure raw agave syrup, because as well as being a great sweetener it also contains “saponins”. Saponins aid in the binding of cholesterol, lowering overall cholesterol levels. It also contains healthy microorganisms and fiber, which aid digestion.
The cooking process involves taking the hunny over 110c for over an hour then cooling for 1 hour then returning to high heat to temper, then reducing to 80c for the jar process. All this takes place in a kitchen with purified air to prevent any contamination.
